The thin, fiber-like threads of chili pepper originate from the culinary tradition of Korea, where they are called "shilgochu" and are used instead of powder or various fresh chilies. They are produced from various red peppers of the Capsicum genus, such as the chili idu, the jinta, and the chaotian. Traditionally, chili threads are decorative, but they are considered an essential ingredient in the preparation of kimchi pickles.
Shape: Red peppers are cut into strips so thin that they actually resemble threads. Their thickness does not exceed 0.05 cm, while their length varies between 5-8 cm. Although dried, they retain a relative humidity of around 15%.
